Maple Syrup Barbecue Sauce
3/4 cup Rolling Ridge Maple Syrup
1 cup Ketchup
2 tsp grated lemon rind (optional)
1 cup onion, finely chopped
1/4 cup brown sugar, firmly packed
1/4 cup lemon juice
2 tsp Worcestershire sauce
1/4 cup water
1/2 tsp salt
2 Tbsp garlic, finely chopped or crushed
1/2 tsp coriander (optional)
Combine all ingredients into a medium sauce pan. Bring to a boil and simmer for 15 to 20 minutes, uncovered. Cool. Store, covered in refrigerator for up to one month.
Yield: about 4 cups
