Maple Baked Beans
2 cups dry white pea beans
2 tsp salt
1 cup Rolling Ridge Maple Syrup
1 tsp dry mustard
¼ cup chili sauce
3 slices bacon (optional)
¼ cup ketchup
2 cups boiling water
1 small onion, chopped
Place beans in large bowl and soak overnight.
Drain. Cover with water again, and cook until soft, about an hour. Drain again.
In a small bowl, combine maple syrup, chili sauce, ketchup, chopped onion, salt, and mustard.
Place half of the beans in 2 quart casserole, top with diced bacon (if using), then remaining beans.
Pour the syrup mixture over beans.
Add boiling water.
Cover and bake at 300*F for 6-7 hours, adding more water as needed to keep beans moist. OR you can place the beans and additions in a crock pot, and place on high for approximately 12 hours, then turn down to low for the last 8-12 hours, stirring and adding water as necessary.
